Eingemachts (Beet Conserves)

Eingemachts is a term that encompasses all sorts of jams and candies. This recipe made from beets was popular at Passover. Eingemachts can also be made from radishes, carrots or cherries.
4 cups of shredded beets
4 cups sugar
¼ cup water
1 teaspoon ground ginger
2 small oranges peeled and sectioned
2 lemon slices
½ cup almonds
Combine all but nuts. Cook slowly, about 1 hour, or until jellied. Cool and then add nuts just before serving.
For jam: Pour into glass jars
For candy: Spread hot mixture on a moistened cookie sheet. Let cool. Cut into diamond shapes and toll in powdered sugar.
