Honeyed Carrots

A typical Rosh Hashanah side dish, the round carrot slices symbolic coins of good fortune should come to you in the coming year.

3 tablespoon vegetable oil
5 cups sliced carrots
3 tablespoon orange juice
½ teaspoon salt
¼ teaspoon dried ginger
¼ cup honey

Combine all ingredients in a saucepan, cover and cook over low heat for 25 minutes, stirring occasionally.
